Rice is a cereal like corn or wheat, but unlike its relatives rice has less fat and it is eaten by roughly half of the world’s population. The delicious rice is healthy and very digestible for its excellent nutritional characteristics. Rice can be subdivided into four basic varieties - common, prime quality, superb quality and premium quality, depending on its grain characteristics (short, medium, round or long). Common rice has very small, round grains and it is especially suitable for minestrone and other soups. Prime quality rice has medium-long, round grains and a slightly higher cooking time. This rice is perfect for hors-d’oeuvres, and hot and cold main dishes. Superb quality rice is characterized by semi-long and long grains. One of the most important varieties is Sant’Andrea rice. The scientists think that nowadays exist approximately 140.000 varieties of rice, even if there isn't a precise number. Rice is the main food for three of the four most populous countries of the world: Cina, India, Indonesia. Rice in not only a natural food, but it is culture, economy, politicy, society.
